Forgot to do this last night.
May. 28th, 2004 07:50 amWhen you get fresh peaches from your local market, you love them as if they
are young children who need nurturing and love to bring out their best
qualities. You take your newly acquired children home and you lovingly
give them a short bath in boiling water. Usually 30 seconds is enough for
the kids... You don't want to cook them, afterall... just loosen their
skins a bit. Immediately after the hot water, you submerge them gently in
ice water. This shocks them and stops the cooking process completely. It
also loosens the skins from the flesh. Peel the skins off gently,
revealing the lovely rosey flesh underneath. Slice the peaches from the
pit, and place the slices in a bowl. Once you have them all sliced up, go
find your sugar cannister. Sugar brings out the fruits natural juices, and
obviously will sweeten them. Depending on how many peaches you have,
you'll vary the amount of sugar you use. I'd say 6 p! eaches... equals a
cup of sugar. Eyeball it. Pour the sugar over your carefully tended
children, and stir. Cover the container and place the peaches in the
fridge. Wait a couple of hours. Open the container, give the kids a stir,
and you will find that they have created their own lovely syrup. :)
For cobblers and pies. Take those peaches, place them in a pot, syrup and
all, and add some cornstarch to thicken. Continue on with your dough and
whatnot. I promise your kids will not let you down.
